     Ann's Thai Soup

Ingredients
1 14 ounce can coconut milk
1 14 ounce container chicken broth
1/2 teaspoon fresh ground ginger
1 teaspoon minced lemon grass
1 pound chicken breast, cut into small chunks
2 small cans mushrooms, do not drain
1 Tablespoon fresh lime juice
1 teaspoon brown sugar
1 teaspoon Thai chili paste
 
1 red onion chopped
4-6 garlic cloves, chopped
1 Tablespoon oil
1 heaping teaspoon red pepper flakes

Instructions
In a large soup pot saute the chicken, onion & garlic in the oil. Add all other ingredients. Simmer for 1 hour stirring occasionally.
If you can't find lemon grass, the zest of 2 small lemons will do. If you can't find Thai chili paste you can use Chinese chili paste. There is definitely a difference in flavor, but if your recipe calls for just a little, say... less than 1/2 teaspoon of either one, it will probably only affect the outcome in a subtle way.
