     Grilled Chicken Tzatziki Salad

Ingredients
4 boneless, skinless chicken breasts, cut into small chunks
1 C plain greek yogurt
2 tbsp fresh lemon juice
1/2 tsp each dried oregano, ground cumin, smoked paprika
1/4 tsp each, ground cinnamon, ground cardamom, black pepper
1 tsp kosher salt
2 tbsp olive oil
1 1/2 C Plain Greek yogurt
1 clove garlic, minced
 
2 tbsp fresh lemon juice
2 tbsp red onion, finely chopped
1/2 medium cucumber, peeled and grated
1 tsp dried dill weed
1/2 tsp kosher salt
1/2 tsp black pepper
Romaine Lettuce, Tomatoes, Red Onion
Cucumber, Kalamata Olives, Feta Cheese Crumbles

Instructions
1. Combine yogurt, spices, lemon juice, olive oil and salt and mix until combined. Add chicken to the yogurt mixture and marinade for at least 30 minutes, up to overnight.
2. Place chicken on bamboo skewers that have been soaked in water. Grill over medium-low heat for 20-25 minutes or until cooked through.
3. Combine all sauce ingredients in a medium sized bowl and refrigerate until ready to use.
4. Chop vegetables and arrange on a plate. Lay cooked chicken skewers over the salad and top with the tzatziki sauce and a drizzle of olive oil. You could use store bought sauce.
