     Cheesy Beef Enchiladas

Ingredients
1 lb ground meat browned and drained
2 10oz cans enchilada sauce
1 package taco seasoning mix prepared according to pkg directions
1/2 lb longhorn cheese, grated
1/2 pound mozzarella cheese, grated
12 corn tortillas
Cooking oil, 1/2 inch deep in skillet
1 medium onion, chopped
 

Instructions
Brown beef and pour off fat. Add 1 can enchilada sauce and taco seasoning mixture, simmering for 20 minutes. Combine cheeses. Heat remaining enchilada sauce. Dip each tortilla into hot oil for 2- 3 seconds., then into enchilada sauce. Fill each tortilla with some onion, beef mixture and cheese mixture reserving 1/2 of the cheese mixture and some onion for topping. Roll tortilla and place seam side down in a 9x13 casserole. Pour remaining enchilada sauce evenly over enchiladas, sprinkle with onion and top with cheeses. Bake for 350 degrees for 15-20 minutes.
