1 cup apple juice
|

1/2 cup soy milk
|
|
1 tsp vanilla
|
|
1 tsp lemon juice
|

1/8 tsp salt
|

2 cups plain cooked brown rice
|

1/3 cup raisins
|
|
1/3 cup chopped walnuts
|
|
2 TB rice syrup
|

Instructions |

|
Preheat oven to 350.
|
|
|
In large bowl mix apple juice, soy milk, rice syrup, vanilla, lemon, and salt.
|
|
|
Add rice, raisins, and nuts, and mix again.
|
|
|
Pour into lightly oiled baking dish and baked (covered) for 45 - 50 min.
Variations- Add sliced apples. Add 1/2 tsp cinnamon and/or 1/4 tsp nutmeg.
