     Corn Salad with Fruit and Vegetables

Ingredients
2 cups sweet corn
1 cup haricots, cut in 1 inch pieces, blanched
1 1/4 cups seeded, diced cucumber
1 cup sliced radishes
1 cup roasted beets or zucchini
2 cups cherry tomatoes, halved
1 cup raspberries
1 cup pitted cherries, halved
1/4 cup minced shallot
 
1/4 cup champagne vinegar
1/2 cup sunflower oil
1 1/2 tsp salt
1/2 tsp ground black pepper
1 Tbsp chopped mint leaves
1 Tbsp chopped chives

Instructions
Combine vegetable, fruits, and shallots in large bowl. In smaller bowl, whisk together vinegar, oil, salt and pepper. Pour vinaigrette over vegetables and fruits and toss gently to combine. Place bowl in refrigerator and allow to marinate for at least 30 minutes.
Remove from refrigerator, stir in herbs. Adjust seasonings to taste.
