     Vegetarian Lasagna

Ingredients
3 cups Prego Traditional pasta sauce
8 oz lasagna noodles
15 oz (approx 2 cups) ricotta cheese
2 cups fresh spinach leaves, shredded
2 eggs, lightly beaten
2 - 4 cloves garlic, minced
salt
ground pepper
1 cup shredded mozzarella
 
1 cup shredded cheddar
Coursely grated romano/parmesan

Instructions
Preheat oven to 400 degrees. Oil 13 x 9 baking dish. Warm pasta sauce in pan. Cook pasta al dente in boiling, salted water and set aside.
In bowl, combine ricotta, spinach, eggs, garlic, salt, and pepper. Spread about 3/4 cup sauce in bottom of baking dish . Layer with 1/3 of lasagna, half the ricotta mixture, 1/2 cup mozzarella and cheddar, sprinkle with romano, top with another 3/4 cup of sauce.
Repeat layers. Top with remaining lasagna, sauce, and cheeses.
Bake uncovered in oven for 35 to 40 minutes. Remove from oven and allow to rest about 10 min prior to serving. Variation -- can add ground turkey (Jennie-O Italian).
