     Shrimp Tacos

Ingredients
1 c. plain nonfat yogurt
Zest of 1 lime
1 T. olive oil
2 T. chopped fresh mint
2 T. extra-virgin olive oil
1 T. fresh lime juice
1/2 tsp. ancho chili powder
1 lb. large shrimp, peeled and deveined, rinsed - dried
1 c. corn kernels, fresh or frozen
 
1 c. seeded and diced tomatoes
1/2 avocado, cut into 1/4-inch pieces
2 scallions, sliced
2 T. chopped fresh mint
1/2 tsp. minced green jalapeno
1/2 T. extra-virgin olive oil
1 T. fresh lime juice
1/4 tsp. ground cumin
8 taco shells of your choice - lettuce

Instructions
Combine first 4 ingredients (yogurt through mint) in small bowl to make minted lime yogurt sauce, adding salt and pepper to taste. Refrigerate.
Combine ingredients 5-8 (second olive oil through shrimp) in medium bowl and let marinate 15 minutes at room temperature. Salt and pepper to taste.
Combine ingredients 9-17 (corn through cumin) in medium bowl to make corn salsa.
Cook shrimp for 2 minutes per side in nonstick skillet over medium heat. Cut in half. Make tacos with shrimp, corn salsa and lettuce, topping with minted lime yogurt sauce
