     Pumpkin Poppers

Ingredients
1 3/4 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup coconut oil (or vegetable oil)
1/4 cup brown sugar
 
1 egg
1 teaspoon vanilla extract
1 1/2 cup pumpkin
1/2 cup milk
For coating
1 stick of unsalted butter, melted
2/3 cup granulated sugar
2 tablespoons cinnamon

Instructions
Combine first six ingredients in a bowl and whisk till combined
In another bowl mix oil, brown sugar, egg, vanilla, pumpkin, and milk.
Pour dry ingredients in to wet and mix till combined and do not overmix
Fill your mini muffins tins until almost full and bake 10-12 minutes. While baking melt butter in a small bowl and combine with cinnamon and sugar. Let poppers cool for a few minutes and then dip in cinnamon sugar bath.
