8 cups of chicken broth

2 pounds shredded chicken

2 large onions, chopped

2 bunch celery, chopped

2 bunch kale, chopped

3-5 cloves of garlic minced

2 bay leaf

|
4 cups of water
|
|
2 cups of quinoa
|

Instructions |
|
|
Heat large pot with olive oil for 3-5 minutes. Add
chopped onion, minced garlic, and celery and cook until soft 5-7
minutes.

Add the bay leaves, broth, water, and chicken and
cook on high. Once it boils, simmer for 10 minutes.
|
|
|
Add Kale and cooked quinoa and cook for another 10
minutes.
