     Red Cabbage, Apple & Sesame Slaw

Ingredients
1 small head red cabbage (4 - 5 c), cored and shredded thin
1 large tart-sweet apple such as honey crisp, braeburn or granny smith, cored and shredded
2T plum balsamic vinegar (or fresh lime juice)
2 scallions, whites chopped fine and greens chopped on angle to 1/2 inch thickness
2 - 3T toasted sesame seeds
1/2 tsp. salt
2 tsp. toasted sesame oil
1/4 c Ginger Nuoc Cham Sauce (see accompanying recipe)
1/4 c cilantro leaves, chopped
 

Instructions
Combine all ingredients in large mixing bowl and toss well to incorporate.
Serves 6 as side salad. Can be refrigerated or enjoyed room temperature.
Serving Suggestions
Serve drained mixture inside spring rolls or as filling for lettuce cups
