     Chilli Jam

Ingredients
5 large red peppers – deseeded weight of approx. 1.2kg
10 small fresh red chillies
8 large cloves of garlic
1 large piece of ginger
1 400gr tin cherry tomatoes
250ml red wine vinegar
500gr sugar
 

Instructions
Makes approx 7 jars of 212ml each Finely shop the first 4 ingredients in a food processor. Add all the ingredients to a large pot and bring to the boil. Keep boiling for at least an hour or till it thickens and looks syrupy. Towards the end of cooking, blend with a hand blender for a smoother consistency (optional). Spoon into hot sterilized jars and quickly close with sterilized lids. Turn upside down to cool.
