Notes:
Some of these ingredients can be substituted. If you can’t find “queso fresco”, it can be substitute it with Feta Cheese or Parmesan too. In some Spanish grocery stores you can also find the cream or “crema” along with the “Queso fresco”. If you can’t get a hold of “crema” it can also be substituted with sour cream. (All these substitutions may change the flavor of the final product slightly but it ends up delicious!. You can try this recipe with other variety of cheeses.

Grind the cheese until it is really fine. Mix in with it the eggs, the sugar, the “crema” and the flour—that has been well sifted with the baking powder until the mix is uniform. The mix will be thick.

Let the mix rest for about 1 hour, and then mix with a wooden spoon and scoop into a greased and floured mold ready to go in the oven, make sure to leave about ¼ of the edge free, bake for 325F for about 20 to 25 minutes or until it is golden brown on top and the knife test is ok.
