     Chicken/Wild Rice

Ingredients
1 cup wild rice (prepare according to direction)
1/2 cup chopped onion
1/2 cup margarine
1/4 cup flour
6 oz can sliced mushrooms, drained (save liquid)
1-1.5 cups chicken broth
1.5 cups light cream
3 cups diced cooked chicken or turkey
1/4 cup pimento (optional)
 
2 T parsley
1.5 tsp salt
1/4 tsp pepper
slivered almonds

Instructions
prepare wild rice according to directions. Cook onions in margarine until tender but not brown. Stir in flour. Add drained sliced mushrooms.
Add enough chicken broth to mushroom liquid to make 1.5 cups. Gradually stir into flour mixture. Add light cream. Thicken.
Add wild rice and other ingredients.
2 QT casserole dish. Sprinkle with slivered almonds. Cook at 350 degrees at 25-30 minutes.
