     Coconut Cream Pie

Ingredients
2/3 cup sugar
1/2 tsp salt
3 Tbsp corn starch
1 Tbsp flour
3 cups milk
3 egg yolks slightly beaten
1 Tbsp butter
1 1/2 tsp vanilla
3/4 cup shredded coconut
 
Meringue- 3 egg whites
1/4 tsp cream of tartar
6 Tbsp sugar
1/2 tsp vanilla

Instructions
Mix sugar, salt, corn starch and flour. Stir in milk gradually and cook over medium heat stirring constantly until mixture thickens and boils. Add about 1/2 of mixture to slightly beaten egg yolks, stirring as you mix. Blend all together and cook 1 minute more, stirring constantly. Remove from heat, add butter and vanilla and coconut. Pour into baked pie shell, cover with meringue, bake until brown at 400 for 8-10 minutes.
Meringue- Beat egg whites until stiff, keep mixing and add cream of tartar and sugar, 1 tablespoon at a time. Add vanilla and mix till soft peaks form.
