     Sour Dough Bread and Starter

Ingredients
1 pkg dry yeast (1/4 oz)
1/2 cup warm water
3/4 cup sugar
3 Tbsp. instant mashed potatoes (uncooked)
1 cup warm water
Sourdough Bread-
6 cups bread flour
1 Tbsp salt
 
2 Tbsp sugar
1/2 cup oil or 1/2 cup softened butter
1 1/2 cups lukewarm water
1 cup starter
1 pkg yeast dissolved in warm water

Instructions
To Make Starter- Mix yeast and warm water and check to see if yeast is working. Add remaining ingredients, let set on counter all day (8 hrs.) then feed and set in refrigerator 3-5 days.
To Feed Starter- Feed every day that it sits in refrigerator- Add sugar, instant potatoes and warm water in the same amount used to make the starter.
Sourdough Bread- Mix above ingredients and knead about 20 strokes or until smooth, place in bowl and lightly cover with oil, cover with damp cloth and let rise till it doubles in size. Turn onto floured surface , knead, divide in half and knead again, put in greased pans, coat with oil and cover with wax paper sprayed with pam, let rise till doubles in size. Bake at 350 till golden brown.
