     Garbanzo Pasta Salad

Ingredients
3 cups (8oz) medium shells, uncooked
1/4 cup onion, finely chopped
1/4 cup parsley, finely chopped
1/4 cup (2oz jar) sliced pimento
1 clove garlic, minced
2 Tbsp red wine vinegar, or lemon juice
1/3 cup EVOO
2 cups (19oz can) chick peas, drained
 

Instructions
Cook shells, drain. Rinse with cold water to cool quickly, drain well.
Large bowl, combine onion, parsley, pimento, garlic, and vinegar; let stand 5 mins. Add remaining ingredients and cooked shells, tossing lightly until well blended.
Chill.
