     Curried Carrots

Ingredients
4 cups shredded carrots
1/3 cup raisins
1/3 cup chopped cashews
3 TBL lemon juice
2 TBL finely chopped mint
2 TBL flaxseed or olive oil
1 tsp turmeric
1/2 tsp cinnamon
1/2 tsp coriander
 
1/4 tsp cumin
1/8 tsp yellow mustard
1/8 tsp cardamon
1/8 tsp cayenne (optional)
Dash each of clove, nutmeg, and black pepper
1/4 tsp sea salt or to taste

Instructions
Combine all ingredients in a large bowl and serve. This will last for three days in the refrigerator, but it tastes best fresh. Spruce up the flavor with a squeeze of lemon if needed.
TIP- If you don't have all the spices listed you can make it easy on yourself by using a store- bought curry blend. Use about 1-2 tsps for starters and add more as needed.
