     Zuchinni Parmesan Crisps

Ingredients
3 Large Zuchinni (Can also use Summer Squash or a combination of the two)
1 Tbls EVOO
1/4 Cup Grated Parmesan Cheese
1/4 Cup Panko Bread Crumbs
1 Tbls Garlic Powder
Salt and Pepper to Taste
 

Instructions
Preheat oven to 450 degrees.
Cut zuchinni into 1/4 inch slices. Combine panko, parmesan, olive oil, garlic powder, salt and pepper. Toss with the zuchinni to coat.
Spread in a single layer on a baking sheet covered with foil and coated with cooking spray. Bake 25-30 minutes until brown and crispy.
