     Fruit Cobbler

Ingredients
1/2 c. butter
1 c. all purpose flour
2 c. sugar, divided
1 Tbsp baking powder
pinch of salt
1 c. milk
4 cups chopped fruit (apples, plums, sour cherries, peaches)
1 Tbsp lemon juice
1 tsp ground cinnamon
 

Instructions
Preheat oven to 375 degrees. Place butter in 11X7in (I used my round RockCrock) baking dish; place in oven until butter melts. Removed from oven, and set aside.
In a medium bowl, combine flout, 1 c. sugar, baking powder, and salt; add mild, stirring just until dry ingredients are moistened. Pour batter over butter in baking dish (do not stir).
In a medium saucepan, bring 3/4 c. sugar, chopped fruit, and lemon juice to a boil over medium-high heat, stirring constantly; pour over batter (do not stir).
In a small bowl, combine cinnamon and remaining 1/4 c. sugar. Sprinkle over the fruit mixture in baking dish. Bake for 40-45 minutes or until golden brown. Serve cobbler warm with ice cream, if desired.
