Method- Pastry
Mix flour, salt and butter in a bowl or in a
mixer with the dough hook. Add water to form a
stiff paste. Form a ball with the dough and
leave aside.

Cook the minced beef, the garlic and the beef cube
in a little oil and little water. Add the polpa,
tomatoes paste, sugar, spices, vegetables, basil
and pepper. Leave to simmer for a while. Then leave it to cool,
don't put the mixture hot on this dough cause it is very soft
dough.
Meanwhile turn dough on to a floured board or
worktop and roll out pastry. Grease a baking
dish and put the pastry flat into it. In a
large bowl put the cooked rice, mushed
potatoes, beef sauce, beaten egg, diced
mozzarella, salt and the grated cheese. With a
wooden spoon mix everything together. Place
mixture on the pastry, one side of the dish,
leave 1 inch from the border. Take the other
side of the dough and close the edges and press
with a fork. Beat egg and brush top of roll.
Bake on 240c for 45 minutes or till golden
brown. Enjoy --)
