     Jim's Raw Apple Cake

Ingredients
4 cups chopped apples I prefer Winesap but I use whatever I have
2 cups flour
2 cups sugar 1
2 tsp baking soda
2 tsp cinnamon
1 qtr tsp cardamon optional
1 tsp salt
1 half cup vegetable oil
2 eggs beaten
 
2 tsp vanilla
1 cup chopped walnuts
1 sometimes I change the sugar to 1 1 half cups white sugar . 1 half cup brown sugar.

Instructions
Sift dry ingredients together I usually include the sugar with the wet ingredients.m Beat eggs, add vanilla, vegetable oil, sugar and blend. Add raw apples and mix. Add dry ingredients slowly and mix. Batter may feel dry but apples will help. Mix in nuts.
preheat oven to 350 degrees. Grease and flour a 9 x 13 cake pan or use a combination spray. Pour cake batter into pan. Bake 40 to 45 minutes. Done when toothpick inserted towards center comes out dry. Let cool and serve with whipped cream, cool whip or ReddinWhip.. Cake also keeps well when covered in refrigerator.
this is a recipe I got from the Cook Network on the Internet. It is close to the one my wife Mary used to make.
