Bring pot of salted water to a boil. Add green beans and took until tender (about 4 minutes).Drain, run under cold water to refresh, then drain again. Pat dry with paper towels. Prepare vinaigrette, whisk together mustard, vinegar, salt and pepper. Whisking constantly, slowly drizzle in the olive oil and continue whisking until slightly thickened. Before serving, add green beans and walnuts, toss with vinaigrette. Adjust seasoning if necessary. Transfer to serving bowl. Sprinkle with blue cheese and parsley.
