Dissolve jello in boiling water. Let cool. Add 7-up. Chill until partially set. Drain pineapple and keep liquid. Add pineapple and diced banana to jello. Chill until firm.
In saucepan, combine sugar and flour. Stir in pineapple juice and egg. Cook until thickened. Chill. Whip the shipping cream. Fold into chilled mixture of pineapple juice, egg, flour and water. Spread over jello. Sprinkle with cheddar cheese.
