     easy chinese fried rice

Ingredients
3 cups cooked carolina white rice
2 tbsp sesame oil
1 small onion choppped finely
1 cup frozen peas thawed (optional)
2-3 Tbsp soy sauce
2 eggs lightly beaten
2 Tbsp scallions (optional)
 

Instructions
note- the original recipe says it's best if you cook the rice the day before and refrigerate till you fry it but it tastes great either way- fresh rice or day old rice.
preheat oil in large frying pan. add onion and peas and fry until tender.
slide the fried ingredients to the side and pour the beaten eggs on the other side. using a spatula scramble the eggs. once cooked mix with vegetables.
add the rice to the mix and pour the soy sauce on top. stir and fry the rice until heated through and combined. add chopped scallions if desired.
Serving Suggestions
goes great with any chinese dish. just like chosen island!
