     Maltese Traditional bones (Ghadam tal-Mejtin)

Ingredients
With this recipe l have made 12 bones, and with the remaining mixture you can make a tart.
1 kilo self-raising flour
300g butter
4 eggs
1 grated rind of a lemon
225g sugar
Few drops of vanilla essence
Filling-
500g ground almonds
 
400g sugar (used 300g)
2 egg whites
Few drops of almond essence
1 grated rind of a lemon
Juice of a lemon
To make glac'e icing-
225g icing sugar
2-3 tblspoon water
Crushed pistachios to decorate

Instructions
We make these Maltese Traditional bones, during the Halloween days as well --) Method-Pastry Mix butter and self-raising flour, till bread crumbs. Add the sugar and lemon grated rind. Beat eggs and add them to the mixture. Add the vanilla essence and mix till the mixture forms a ball of dough. Sometimes you need to add some milk to the mixture. Leave it aside for 1/2 hour.
Method Filling- Mix together ground almonds and sugar, beat well the egg whites and add them to the mixture. Add the almond essence and a little water to soften the mixture, not too runny.
Roll out pastry and cut in shape and put in a greased baking dish. Put a little almond mixture on each bone shape, leave 1/2 inch from the outside and brush the sides with water, so when you put the other shape on top of each other so they will stick together.Complete this process till you make them all. Bake in the middle shelf for 1/2 hour on 180c. When ready leave to cool.
To make glac'e icing- Sift the icing sugar into a bowl, gradually beat in enough water to give a smooth icing, thick enough to coat the back of a spoon. Use immediately. Decorate with the glac'e icing and pistachios. Enjoy--)
