Place milk, rice and sugar in a slow cooker. Stir to dissolve sugar. Cook on high 2 1/2 hours or on low 4-5 hours. Beat egg, salt and vanilla together. Slowly whisk 1/4 c. amounts of the hot milk and rice mixture into the egg until it feels hot. Stir egg and milk mixture into rice mixture. Cook on high 20 more minutes or until pudding thickens. Stir in cinnamon to taste if desired.
