     Vermont Turkey Loaf

Ingredients
1/2 cup chopped onion
1/2 cup chopped carrots
1/2 cup chopped button mushrooms
1 egg
1/4 cup plain bread crumbs
1 TBLS. olive oil
3/4 lb. ground breast breast turkey meat
Salt & ground black pepper
2 TBLS. pure maple syrup
 
2 tsp. Dijon mustard
SWEET POTATOES-
3/4 lb. sweet potatoes
1 medium bell pepper, chopped (1 cup)
1 TBLS. olive oil
Salt & pepper to taste

Instructions
Preheat oven to 375 degrees. Place onion, carrot and mushrooms in microwave safe bowl and microwave on high for 3 minutes (or saute in skillet with veggie oil). Seperate egg white from yolk and discard yolk.
Remove bowl from mircrowave and add breadcrumbs, olive oil, turkey and egg white. Using a fork, mix all ingredients together until well blended. Add salt & pepper to taste and mix again.
Line a baking tray whith foil and shape meat into loaf about 6 inches by 3 inches. Bale for 15 minutes.
Meanwhile, mix maple syrup and mustard together. Remove turkey loaf from oven and poke several holes in it witha skewer. Spoon glaze over loaf. Return loaf to oven 5 more minutes. Microwave sweet potatoes, mash potatoes, add green pepper, mix in oil and season with salt & pepper.
Serving Suggestions
Slice and serve half to each person.Pour pan juices over each serving.
