Place roast in slow cooker. Pour peppers with juice over roast. Sprinkle onion soup mix over roast. Cook on low 8 hours or on high 5 hours. Shred meat with two forks. Serve on rolls for sandwiches with provolone cheese and use broth to dip if desired.
