Mix the ground almonds and sugar in a bowl. In another small bowl beat the egg white and
add it to the mixture. Add the almond essence, the grated lemon rind and the
juice.Meanwhile put the rice paper in a baking dish. Put the almond mixture in a piping bag
and do your own design. You can roll some of the mixture in the palm of your hand, in a
small ball and roll it in the icing sugar before and after. Then place them on the rice paper
and with your thumb press a small hole and put an almond. When you finish all the paste,
decorate with half a cherry or almond. Bake in oven ,middle shelf 180c for 15 -25minutes or
