     Pasticcini di Mandorle

Ingredients
150g Pure ground almonds
100g sugar (If double the recipe I have made only 150g sugar)
1 egg white
(If double the recipe I made 1 egg white and a little water instead of another egg white,
as you wish, don't make it a runny mixture)
1/2 grated rind of a lemon
1/2 juice of a lemon (optional)
Few drops almond essence (1/2 teaspoon)
1-2 sheets rice paper (karti ta ostji)
 
Icing sugar to sprinkle or to roll
To decorate-
Few hole roasted almonds, glace cherries, cut in halves and a little icing sugar

Instructions
Mix the ground almonds and sugar in a bowl. In another small bowl beat the egg white and add it to the mixture. Add the almond essence, the grated lemon rind and the juice.Meanwhile put the rice paper in a baking dish. Put the almond mixture in a piping bag and do your own design. You can roll some of the mixture in the palm of your hand, in a small ball and roll it in the icing sugar before and after. Then place them on the rice paper and with your thumb press a small hole and put an almond. When you finish all the paste, decorate with half a cherry or almond. Bake in oven ,middle shelf 180c for 15 -25minutes or golden brown. Enjoy the taste,they taste delicious! --)
