     Garlic & Parsley Potatoes With Red & Black Pepper

Ingredients
1 pound of small white potatoes
4 garlic cloves crushed
3 tablespoons EVOO
1/2 - 2 teaspoon red pepper flakes
handfull of fresh flat-leaf parsley
coarse salt
coarse black pepper
 

Instructions
Preheat outdor grill to high or the oven to 500 degrees. Rip off a couple of foil sheets about 18 inches long and stack the two sheets together. Cut potatoes into wedges and pile them up in the center of the foil. Combine the garlic with the potatoes and dress them with the EVOO, red pepper flakes, parsley, and lots of salt and pepper. Pull the ends of the foil together and fold them over, then close up the opposite side to form a packet.
Keep the potatoes as flat as possible and centered in the packet. Cook for about 20 minutes, turning once. On a grill, keep the packet off to the side of the heat so you do not scorch the potatoes. Keep the grill lid down for the first 10 minutes. In the oven, place the packet just below the center of the oven, turning once.
