Ingredients
8 cups vegetable oil for frying
2/3 cup all purpose flour
1/4 tsp salt
1/3 cup beer
1 egg yolk
2 tsp olive oil
1 lb. cleaned raw calamari, sliced into rings
prepared tartar sauce, marinara sauce, or smoky chipotle sauce
 

Instructions
Heat oil to 375. In a medium bowl combine flour and salt. Add beer, egg yolk and olive oil and stir until smooth. Dip calamari into batter and carefully place in hot oil and cook 1 minute.
Drain on paper towels and sprinkle with salt. Keep warm in 200 degree oven. Serve warm with favorite sauce.
