     Cranberry-Ginger-Cardamom Compote

Ingredients
4 c fresh cranberries
1 tsp. orange zest plus 1/2 c orange juice
1 c sugar
3 inches fresh ginger, peeled and sliced to one-inch pieces
1 cinnamon stick
1 tsp. ground ginger
1 tsp. ground cardamom
1/2 tsp. salt
 

Instructions
Combine all ingredients in small sauce pot. Cook uncovered over medium-high heat until boiling, stirring regularly. Reduce heat to medium-low and continue to simmer until liquid has been absorbed and cranberries have softened and dissolved to sauce (about 10 min.).
Remove cinnamon stick and ginger pieces before serving.
Serving Suggestions
Great served room temperature or chilled with soft cheese. Serve as condiment with roasted poultry or pork.
