     Fettuccini with Vodka Sauce

Ingredients
2 TBS olive oil
1/2C ch onion
1 garlic, finely chopped
1/2C vodka
1 can (28 oz) plum tomatoes with juices
1/2T crushed red pepper
1C heavy cream, room temp
12 oz fresh or 8 oz dry fettuccine
2T parsley
 
1 can fancy crab meat

Instructions
Heat oil in medium skillet, add onion, saute until tender but not browned, about 5 minutes, stir in garlic, saute 1 min. Add tomatoes, vodka, and red pepper, simmer, stirring to break up tomatoes, until sauce is reduced and thickened, about 15 min. Stir in cream, simmer, stirring until sauce is thickened slightly, about 5 min. Season with salt. Add crab and parsley, until heated.
Meanwhile, cook fettuccine in plenty in boiling salted water. Drain.
For 4 servings, double all except tomatoes. One can is plenty. Add another 1/2C cream.
