Preheat oven to 350 degrees. For the crust, you'll
use the first four ingredients- Cream the 1/2lb
butter and 1/2c sugar in a bowl with an electric
mixer, until light in color. Combine the flour and
salt, and with the mixer on low, add to the butter
until just mixed. Dump the dough onto a well-
floured board and gather into a ball. Flatten the
dough with floured hands and press it into a 9x13
pan, building up a 1/2inch edge on all sides.
Chill in fridge. Bake for 15-20mins, until lightly
browned. Let cool on a wire rack. Leave oven on.
You'll use the remaining ingredients for the
filling- Whisk together the 6 extra large eggs, 3c
sugar, 2Tbl lemon zest, 1c lemon juice, and 1c
flour. Pour over the cooled crust and bake at 350
degrees for 30-35mins, or until the filling is
set. Cool to room temperature before cutting into
bars. Dust (with a fine tooth sifter) with
powdered sugar prior to serving.
