Preheat oven to 350 degrees. Using an electric
mixer at medium speed, combine the first four
ingredients- 4eggs, 1 2/3c sugar, 1c veg oil, 15oz
can pumpkin until light and fluffy. In a separate
bowl, stir together the 2c flour, 2tsp baking
powder, 2 tsp cinnamon, 1tsp salt, and 1tsp baking
soda. Add the dry ingredients to the pumpkin
mixture and mix at low speed until thoroughly
combined and the batter is smooth. Spread the
batter into a greased 13x10 baking pan (or your
choice of cake pans). Bake for 30mins. Let cool
completely before frosting. To make the frosting-
Combine the 8oz cream cheese and 1/2c butter in a
medium bowl with an electric mixer until smooth.
Add the 2c powdered sugar and mix at low speed
until combined. Stir in the 1tsp vanilla and mix
again. Spread onto cooled pumpkin cake. Cut into
bars (if desired).
