     Chicken Stock

Ingredients
carcass of chicken
carrots
onions
parsnips
celery
herb de provence dried
salt and pepper
4-7 quarts water
 

Instructions
Use whatever vegetables you have. Place all ingredients you have in a stock pot with the chicken carcass. Bring to boil. Simmer uncovered 4 hours. Strain. Chill. Discard the hardened fat. Use or freeze.
