1)In large bowl stir together mashed potatoes,
cheese, flour,cilantro and pepper.
2) Form potato mixture into 8 patties, each
about 3/4 inches thick.
3) In a shallow dish beat together the egg and
water.
4) In another shallow dish place bread crumbs.
5) Dip potato patties in egg mixture, then in
bread crumbs, turning to coat both sides.
6) In a large nonstick skillet heat 1 tsp. of
the oil over medium heat; reduce heat to
medium-low.
7) Add 4 patties to skillet; cook for 4 minutes
or until bottoms are golden brown.
8) Gently turn patties and cook for 4-5 minutes
more, or until golden brown.
9) Remove to baking sheet.
10) Keep warm in 300 degrees F over.
11) Cook remaining patties, using remaining 1
tsp. oil.
12) Meanwhile, in a small bowl stir together
sour cream and tapenade.
13) Serve patties hot with sour cream mixture.
