     Sweet Shortcrust pastry

420g plain flour 2 tbsp oil 2 tbsp vanilla extract 200 ml chilled water 225g unsalted butter at room temperature Zest of 1 lemon
Sift flour and add butter and work wh your fingertips to form a crumble then add the zest, vanilla, oil, and gradually add the water till it forms a pliable dough. Not sticky not crumbly not too tough. Knead the dough till smooth seal in clingfilm and let rest in refrigerator for at least 30 mins.
