     Open Faced Chicken Sandwiches

Ingredients
4 T butter
4 T flour
2 c milk
1 t. salt
1/4 t. white pepper
1 c (4 oz.) shredded cheddar cheese
2 lbs. sliced cooked chicken or turkey
8 slices sandwich bread, toasted
16 slices bacon, cooked, drained, and crumbled
 
1/2 c grated Parmesan cheese

Instructions
Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 min., stirring constantly. Gradually add milk; cook over med. heat, stirring constantly until thickened and bubbly. Add salt, pepper, and cheddar cheese, stirring until cheese melts.
Place chicken on toast, and cover with sauce. Sprinkle with crumbled bacon and grated Parmesan cheese. Bake at 400 deg. for 10 min.
Serving Suggestions
Serve with raw veggies or sliced fruit
