Christmas Chutney
800g granny smith apples peeled and chopped
300g fresh cranberries (can be replaced with dried
cranberries)
1 onion finely chopped
350ml apple cider vinegar
200g sugar
1tsp ground ginger
1tsp turmeric
1tsp mixed spice
1tsp coriander
2tsp mustard seeds
2tsp salt
Place all ingredients into a large pan. Heat mixture till it is
simmering quickly. Lower heat and cook for 45 mins, till
chutney has thickened slightly and fruit has become soft.
Spoon mixture into sterlized jars and seal. Store in a cool dark
place.
