Beat the single cream with the yogurt, vanilla
essence and the icing sugar. (You're not going
to have thick cream because both have less fat,
it will be a little runny). Leave aside.
Meanwhile cook the chocolate pudding, see
recipe at the back of the packet. Chop the
wafers in cubes and put some of them in the
bottom of 3 small bowls. Leave half of them for
the second layer. Sprinkle some brandy on the
wafers, pour some chocolate pudding, then
chocolate chips and some of blueberry filling.
Pour some of the cream mixture on the the
blueberry filling, not too much. Put the second
layer of wafers and continue with this
procedure. Finish the second layer with the
cream mixture. Decorate with flaked almonds.
Refrigerate and chill for some hours until set.
The cream mixture stays a little running, even
after it is chilled, but if you want it thick,
use double cream instead of light single cream.
Enjoy --) Taste so good!
