Preheat oven to 400 degrees. Cut up sweet
potatoes into small chunks (you can leave the
skin on or take it off). Mix together the
spices and brown sugar. In a large bowl,
combine potatoes, spice blend, oil, and garlic.
Then pour potatoes, rosemary, and thyme onto a
baking sheet lined with foil.
Roast in oven for 25-40 minutes or until
potatoes are cooked and browned a bit, turning
once or twice.
