     Latkes (Potato Pancake) with Smoked Salmon

Ingredients
2 lb russet potato, peeled
1/2 yellow onion, peeled
2 large eggs
3 tbsp flour
kosher salt and pepper
cayenne
vegetable oil
smoked salmon
sour cream
 
fresh dill

Instructions
Grate potatoes and onion into a large bowl filled with cold water. Let sit for 20 to 30 minutes. Meanwhile in another bowl, mix together the eggs, flour, pepper/salt, and cayenne. When the potatoes are ready, drain them with a colander, squeezing out as much water as possible (they should be as dry as possible). Now stir in the egg mixture and shape into small pancake shapes. In a heavy-duty skillet, fry each latke, making sure that the inside cooks enough. Let dry on paper towels, transfer to plates, and top with smoked salmon, a dollop of sour cream, and some fresh dill.
