     Curried Chiken and Lentil Soup with Sweet Potato

Ingredients
2 T olive oil
1 onion diced
1 rib celery diced
2-4 cloves garlic minced
1-2 tsp minced ginger
2 tsp curry powder
1/4 tsp each cumin and corriander and pepper
2 bonless/skinless chicken breasts (cook whole in the soup)
1 pkg sodium reduced chicken broth 900ml
 
2 cups diced sweet potatoes
1 can no salt added died tomatoes
2/3 c green lentils
1/4 chopped fresh cilantro or parsley

Instructions
In a lg sauce pan sauté onion and celery 2 min over med heat. Add garlic ginger curry powder coriander cumin and pepper. Cook stirring frequently about 1 min. Stir in chicken and tomatoes and both lentils and sweet potato.
Bring to boil then reduce heat and cover simmering until lentils are tender about 20 min or so.
Remove chicken from the soup and using 2 fork pull the meat apart. Return to pot. Stir in Cilantro
