     Mincemeat (not too sweet)

Ingredients
450 Bramley unpeeled apples, cored and chopped
225g shredded suet
350g raisins
225g sultanas
225g currants
225g whole mixed candied peel
350g soft dark brown sugar
grated zest and juice of 2 lemons
grated zest an juice of 2 oranges
 
50g whole almonds, cut into slivers
4 level tsps mixed ground spice
1/2 level tsp ground cinnamon
1/4 level teaspoon ground nutmeg, preferably fresh
6tsps brandy

Instructions
1. Combine all ingredients together in a bowl. 2. Mince the mixture in pulses in a food processor. Preferably, mince only half to get different textures within the mincemeat (optional). 3. Mix thoroughly with a wooden spoon, cover with a cloth and leave overnight to allow the spirit and spices to infuse. 4. Pour into sterilized jars
Serving Suggestions
For mincepies. Can be prepared for the following year
