     Taco Beef Nuggets

Ingredients
1 pound ground meat
2 Tbls Taco Seasoing
1 can (4 oz) chopped green chilies, drained
1/2 pound Co-Jack or Mozzarella cheese, cut into 24 cubes
1 egg
1 Tbls water
2 cups Tortilla chips(nacho-cheese flavored, crushed
olive oil
 
Sauce- 6 Tbls prepared thick taco sauce
3 Tbls honey

Instructions
Heat oven to 400 degrees. Combine meat, taco seasoning, green chilies and water in a bowl, mixing lightly. Divide meat into 24 portions; shape meat around a cheese cube, completely covering the cheese. Beat egg. Crush chips and place in a second dish. Dip each meatball in egg, then into chips, coat completely. Press meatball into flattened nugget shape. Place olive oil in pan, add nuggets; brush the nuggets with olive oil. Bake 15-20 minutes. Combine sauce ingredients and warm. Serve nuggets with the same sauce and with a tossed gren salad.
I fill the scoop shaped tortilla chips with shredded lettuce, then the meatball. Sprinkle shredded cheese on top and drizzle taco sauce on top of that.
