     Easy Cheesy Macaroni

Ingredients
8 oz uncooked elbow macaroni or other fun shaped pasta
1 Tbsp all purpose flour
1 Tbsp unsalted flour
1 cup cold skim or 1% milk
6 oz cheddar cheese, finely grated
Salt and pepper (optional)
 

Instructions
Bring a large pot of salted water to a boil. Add macaroni and cook until tender. Drain well. Meanwhile, in a medium saucepan over medium heat, melt butter. Add flour and whisk until incorporated. Let mixture cook about 1 minute. Gradually whisk in cold milk. Bring to a boil and continue to cook until sauce thickens and coats the back of a spoon in a thick even layer, about 10 minutes. Remove pan from heat and add cheese, stirring until melted.
Add pasta and mix until coated with cheese sauce. Taste and adjust seasoning with salt and pepper if desired. Serve immediately.
