Sauté onion, mixed veggies, and diced Italian-style tomatoes in olive oil.
Turn into casserole dish lined with Pam.
Mash (microwave-cooked) potato with ¼ cup of skim milk in small bowl. Layer over veggies.
Sprinkle with fat-free cheese.
Bake for 10-15 minutes @ 400 degrees.
