Method-Custard
Beat egg yolks with sugar, lemon rind, lemon
juice and boiling water. Bring to the boil and
blend the corn flour mixed to a smooth paste
with cold water, bring to boil, stirring
well.Leave to cool and pour it into 3 big wine
glasses. Cut sponge in 6 rounds size of the
glass, layer a piece in each glass . Sprinkle
sponge of the 3 glasses with some brandy, some
Malibu and fruit juice not too soggy. Drain
fruit and put some fruit salad on each sponge.
Layer another piece of sponge in each glass and
again sprinkle with the remaining brandy,
Malibu and little juice. Mix ricotta with 1
tbspoon sugar ,candied peel and chocolate
chips. Layer it on the sponge. Put some crumble
sponge on it and finish with fruit, flaked
almonds and the cherry. -)
