Using a large spoon make 6 indentations randomly into potato mixture down to bottom of the pan, each about 1 1/2 inches across. Break 1 egg into each indentation. Sprinkle cheese evenly over entire potato mixture, cover skillet. Allow eggs to steam over medium heat until done(about 2 to 4 minutes)
Check eggs frequently for desired doneness. Sprinkle with pepper if desired.
