     Hashbrowns & Eggs

Ingredients
2 TBSP margarine or butter
1/3 cup chopped onions
24 oz bag frozen shredded hash browns
1 tsp salt
6 eggs
2 oz(1/2 cup)shredded cheddar cheese
pepper if desired
 

Instructions
In a 10 inch cast iron skillet, melt butter. Add onion ; cook until tender. Add potatoes; sprinkle salt. Cook over medium heat until potatoes are light golden brown about 8 to 10 minutes.Stirring frequently.
Using a large spoon make 6 indentations randomly into potato mixture down to bottom of the pan, each about 1 1/2 inches across. Break 1 egg into each indentation. Sprinkle cheese evenly over entire potato mixture, cover skillet. Allow eggs to steam over medium heat until done(about 2 to 4 minutes) Check eggs frequently for desired doneness. Sprinkle with pepper if desired.
